Quality of milk at farm level was highly variable due to negligence of recommended milking practices, improper cleaning of utensils. Even though the quality is varying among the milk collecting centers, the plate counts showed that the milk was acceptable for processing. Also it was noticed that the time spent on transporting milk from milk collecting centres to muak Lek was less than two hours and it did not influence the quality to a great extent. Poor quality of farmers-milk and insufficient cooling at some milk collecting centres contributed to the variation in the quality of the milk, arrived at Muak Lek. Milk arrived at a dairy plant in Bangkok (Foremost) had a quality acceptable for processing. The survey indicated that the quality of milk at different stages could be improved further by practicing recommended milking procedures at farm level, increasing the cooling efficiency at milk collecting centres and providing sufficient road tanker services.
