The study was divided into two parts, namely, the plant design for roller dried fish (RDF) production and the experimental work on drum drying. The design included the process design, the equipment selection, and the plant layout. The raw fish used was thread fin bream of 15-20 cm in length. To produce 300 kg RDF per day, 2580 kg of raw dish was required. To equilibrate suppliesd and prices, a buffer stock of two day production was recommended. Prior to drying at least 2.5% starch was added to mince to solve a problem associated with a relatively high fish oil content. The production rate was maximized by lowering the drum spacing and increasing the steam pressure and drum speed to the pint where the product quality was not impaired. The optimum drying conditions for producing product with 5% moisture are 10 atm steam pressure, 0.1 mm drum spacing, and 3 RPM drum speed. Under these condition, the production rate and the overall heat transfer coefficient were 12.1 kg/m2-hr and 950 w/m2 c̕, respectively. The product was in the form of small flakes, porous, white in appearance and could absorb water twice its weight. The cost of the product varied with the raw fish cost and output per year, ranging from $1900-$3300 per ton.
