Production of PDC from Tiger shrimp shell wastes using deproteination, demineralization and deacetylation process was made. Performance of cation resin (Dowex 88) was evaluated at the flow rate of 30 ml/min. Optimum condition of PDC as adsorbent material was investigated at the same flow rate. Effects of processing parameters of cation resin and selected PDC on operation and regeneration flow rate were studied. The recovery yield of chitin production was 31.23% The yields of different PDC (5%, 10 %, 20 % and 30 % NaOH treatment) were similar as 893 recovered from chitin. The degree of deacetylation of PDC increased with the increasing of sodium hydroxide treatment. In ion exchange process, cation resin (Dowex 88) removed amount of K+, Mg2+ and Cai+ from UF mill juice more than 903 at the flow rate of 30 ml/min. In adsorption process, the selection of PDC was conducted at the flow rate of 30 ml/min and bed volume of PDC was 300 ml. PDC treated with 30% NaOH was selected which gave the higher value of colorant removal from UF mill juice, its color value was 84. 8 % T and the value of pH was 7.61. The operation and regeneration volume of this PDC were 1500 ml. The effect of flow rate was studied on cation and selected PDC ranging from the flow rate of 10, 20, 30, 40 and 50 ml/min. The optimum flow rate of cation resin operation and regeneration was 10 ml/min. Its operation and regeneration volume was 5500 ml and 1200 ml, respectively. The suitable flow rate for PDC operation was 30 ml/min with operation volume of 1500 ml. The optimum regeneration flow rate of PDC was 10 ml/min which gave regeneration volume of 1000 ml. Concentrated pineapple syrup was analyzed by using HPLC. The main reducing sugar which consisted of glucose, fructose and sucrose were 29.05, 15.72 and 18.62, respectively. The concentrated pineapple was clear and quite neutral which contained the color value of 70.2 % and pH value of 4.96.
