Diabetes mellitus is a metabolic disorder of glucose metabolism and it is the most common disorder in developed and developing countries. It has been es timated that up to one - third of pateints suffering from diabetes mellitus use some form of alternative or complementary medicine. One plant has received much attention due to its anti - diabetic properties. The present study was designed to identify the bioac tive compound ( Protein,Total phenolic content, A ntioxidant activity) released in the distilled water by fresh okra. The proximate quantitative and qualitative analysis of dried okra extract were carried out. Moreover t he purpose of the present study was to invetigate the inhibitory activities of Ü - amylase and Ü - glucosidase. Okra extract posses the highest inhibitory activity against Ü - amylase (of 11.4 mg/ml) and Ü - glucosidase ( IC 50 value of 385.44 mg/ml) According to the present review it can be concluded that aqueous extract of okra exhibited the best inhibitory activity on the two en zymes studied. The inhibitory activity of okra extract may have presence of phytochemicals like tannin, flavanoids and saponins. The okra extracts were encapsulated by using c alcium - alginate chitosan system to their controlled release of bioactive compound in simulated gastrointestinal system. The encapsulation efficiency and stability of bead was found higher about 66.5% in the chitosan coated alginate beads. Where as the lowe r release of polyphenol and protein were observed in chitosan coated beads that calcium alginate chitosan beads. From the analysis it is found that the qunatity of bioactive c ompunds (DPPH , Protein and TPC ) were varied with respect to time and tem p erature.
