The total optimum phenolic contents of longan peel with the help of ultrasonic method were 48.48mg/g at extraction temperature of 600C which was kept for 60minutes while the least values was observed at extraction temperature of 400C for 40minutes which is 24.48mg/g of the extract being expressed as gallic acid equivalent. The sample was measured at 760nm by using Folin-Ciocalteu method. The kinetic properties of antioxidants were investigated by reacting specific quantity of extract with 2.2-diphenyl-1-picrylhydrazyl (DPPH) radical and the reducing power was determined by mixing the longan extract with a number of different chemical species. The highest scavenging activity was shown by the sample extracted on 600C, 60minutes.
